Which country's 1930s famine is remembered as the Holodomor?

Ukraine, in 1932-33. The name is built from Ukrainian words for hunger and extermination, and the deliberateness it asserts is the whole argument. Millions died in the most fertile farmland in Europe.

The mechanism was administrative rather than agricultural. Grain procurement quotas were set above what had been harvested and enforced by search brigades that took seed grain and household food; villages that failed were blacklisted and cut off from all supply including salt and matches; and internal passport rules stopped peasants leaving to find food. Meanwhile the Soviet Union continued exporting grain.

It was denied for over fifty years. The census that recorded the population loss was suppressed and its organisers shot; Western correspondents in Moscow, most notoriously Walter Duranty of the New York Times, reported that there was no famine, while Gareth Jones, who walked through the villages and said there was, was discredited for it. The USSR acknowledged it only in 1987.
